Cultivating area: south-exposed vineyards with gravelly moraine soil at S. Maddalena (Bolzano) at an altitude of about 300 m above sea level

Vinification: The grapes are harvested and crushed carefully around mid-September. The mash fermentation takes places at a temperature of 25°C in steel tanks and is controlled regularly. After the fermentation process the new quality wine is matured for a few months in oak barrels (15 to 30hl).

Vinification: The grapes are picked at the beginning of October. They are vinificated carefully and fermented in a slow and controlled manner. The new wine develops in small and big oak barrels and is bottled after two years.

Flavour: powerful and harmonious, elegant tannins

Vinification: The Merlot grapes are picked rather late at the end of October. After the careful harvest the grapes are crushed and fermented in a controlled manner in steel tanks. The new wine is matured in small oak barrels for two years and bottled afterwards.
Characteristics:
Colour: dark garnet red with slight reflexes of brick red
Aroma: slightly herbal, blackcurrant, wild cherry and blackberry
Flavour: slightly rough, strong body, full-bodied, smooth tannins, long finish
Ageing potential: ca. 10 years
Serving temperature: 16 to 18 °C
Food pairing: roasted or grilled red meat, venison, piquant cheese

Cultivating area: S. Maddalena near Bolzano
Training system: pergola and guyot
Vinification: In October the grapes are manually harvested. The grapes are fermented in steel tanks. After a storing period of two years in small oak barrels the wine is finally bottled.

Aroma: violets, blackcurrant, dark wild berries, spicy nuances and slightly grassy
Flavour: muscular body, harmonious, elegant tannins, with a lingering finish

Vinification: The grapes are picked at the end of August. The crushed grapes are pressed and the most is fermented in steel tanks at less than 20°C. The wine is early filtered carefully and bottled immediately to preserve its natural freshness.
Characteristics:
Colour: bright, a slight reflex of yellow
Aroma: fruity, a slight flowery touch
Flavour: a light white wine, balanced acidity, harmonic
Ageing potential: 2 to 3 years
Serving temperature: 7 to 10 °C
Food pairing: Aperitif, asparagus, salmon, crustacea, fish entrées

Vinification: The grapes from selected vines are picked, crushed and pressed at the beginning of September. Part of the must is fermented in a steel barrel and part in barrique barrels. It is stored on the fine yeast with bâtonnage. After several months, the wine is gently bottled.

Colour: bright, a slight reflex of yellow
Aroma: yellow fruits, like pears, quince, slight smoky hint of vanilla, floral notes
Flavour: well integrated acidity, harmonious
Ageing potential: ca. 3 to 6 years
Serving temperature: 8 to 12 °C
Food pairing: aperitif, fish dishes, salmon, crustacea, ravioli, South Tyrolean Schlutzkrapfen, rice dishes, Asian dishes, white meat

This noble distillate is made from fermented fresh S. Maddalena pomace based on an old tradition with lots of expertise and love by a renowned South Tyrolean distillery with the classical “Bagnomaria” process.
The St. Magdalener grappa of the Eberlehof comes crystal clear, with a fine and smooth grape aroma, tasty and round with a powerful body. This special grappa is not recommended to be served cool.
